STATE OF THE ART cOLD PRESS MILLING PROCESS

To preserve maximum flavor we use an oxygen-free malaxer to mill the olives. this shields the olive paste from exposure to air during the milling process. Limiting oxygen exposure helps create the freshest extra virgin olive oil possible, ready for immediate bottling. (Olio Nuevo)

Oil

A HARMONIOUS MIX OF FRUITY, PUNGENCY AND BITTERNESS

This rare and coveted olive is known for producing an oil with a pleasant balance of bitterness and pungency. The early November harvest and an unfiltered bottling process assures a grassy fruity peppery robust flavor.

Organically grown and hand picked with just hours between harvest and pressing, Olivin is a fruity oil with a crisp taste and a subtle peppery finish.
